Marlon Bolaños
A new perspective can start with something close to home. For Marlon Bolaños, it started with coffee cherries purchased from his neighbors in Huila, Colombia, and a question about what they could become. He selected and floated the cherries, then fermented them whole in closed tanks for five days before drying them on sun beds for two to three weeks.
Marlon grew up with coffee as his family's livelihood. A barista course at seventeen opened a different view of its possibilities. Today, he and his two brothers are building Three Coffee Farmers in Acevedo, refining fermentation and exploring distinctive varieties on their family's land. This experimental natural captures that curiosity in a cup that keeps unfolding: Merlot, unsweetened black tea, dark chocolate, green apple slushie, and a pineapple finish.
